As a kid I always wanted to try Remy's Ratatouille from the Disney Movie Ratatouille. So since its the beginning of Summer I thought it'll be a great fresh and lively dish for the hot weather.

SAUCE INGREDIENTS
1 Can of Diced Tomatoes
1/2 Yellow Onion
3 Tbsp Butter
1 Cup Broth (can use water)
1/2 Tsp salt
1 Whole Bell Pepper
VEGGIES NEEDED
1/2 Zucchini
1/2 eggplant
3 Tomatos
DIRECTIONS FOR SAUCE
1. On medium heat cook your onions with a little oil until it turns transparent
2. Transfer Onions into a pot and add your butter, broth and tomatoes, let this cook uncovered for 15min-25min or until the soup thickens
3. On the side panfry your bell pepper until it lightly chars
4. Wait until the soup cools a little then transfer to a blender and add your bell peppers, pulse until smooth (the texture should be slightly thick if not put this on the stove until it thickens)
DIRECTIONS FOR PREP
Use a mandoline slicer to slice your veggies make sure to be careful. If you don't have a mandoline you can use a regular knife but make sure to slice your veggies very thinly.
Spread a layer of sauce underneath your cooking dish add herbs of your choice and begin to layer your veggies in a pattern.
Sprinkle a pinch of salt and drizzle olive oil then cover with either parchment paper or tin foil before putting in the oven
Set oven to 180°c for 40 minutes
Then take off your parchment paper/tin foil and put in oven for another 15 minutes
