After moving from California to Vietnam I always missed the cheap $3 Cauliflower Gnocchi from Trader Joe's. So I wanted to share a cheap, easy, and healthy alternative to traditional pastas that are commonly offered in foreign countries.

Ingredients

1.5 lbs Cauliflower

1/2 cup All Purpose Flour

2 tsp oil (for cooking)

Directions

  1. Boil cauliflower for 20 minutes and drain once fully cooked

  2. Use a clean cloth to squeeze the water out of the cauliflower

  3. Combine the cauliflower with the flour to form a dough like consistency

  4. Divide the dough into 4, roll out each portions into long strands, then cut into small rectangles then shape

  5. Use a fork to add ridges

  6. Pan-fry the formed dough on the stove with oil for 2 minutes then they are ready for any pasta dish

This recipe is great for sharing with friends and loved ones. Also a great recipe for a cheat day that's also sustainable. AIthough the not healthiest alternative, I promise you this recipe is great and tastes like a normal brownie.

Ingredients

(Dry Ingredients)

1 cup All Purpose Flour

3/4 cup Cocoa Powder

3/4 tsp Baking Powder


(Wet Ingredients)

1/2 cup Vegan Butter (Melted)

1/2 cup Brown Sugar

1/2 cup Granulated Sugar

1/3 cup Plant milk

3 tsp Vanilla Extract

1/4 tsp Salt


Directions

  1. Preheat oven to 180 degrees celcius

  2. Mix together all dry ingredients

  3. In another bowl combined the brown sugar and granulated sugar, then add your melted vegan butter and whisk till you have a smooth consistency and add the rest of your wet ingredients

  4. In quarters, stir your dry mix into the wet ingredients and transfer your batter into a 8x8 inch pan

  5. Bake for 30 mins or until your batter is fully cooked
